Meatloaf Topping
Oh, how I love this meatloaf topping recipe! It's flavorful, and easy, and keeps every meatloaf I make nice and moist. Give it a try just once and you're going to want to use it every time you make this classic dish.
My meatloaf glaze uses just two simple ingredients and a seasoning blend that gives it the most incredible flavor. This is a meatloaf glaze without ketchup and without brown sugar, so it's great for a low-carb, keto meal plan.
Meatloaf Glaze Without Ketchup Ingredients
- tomato paste
- white vinegar
- dried mustard
- paprika
- salt
- basil
- black pepper
- garlic powder
- onion powder
Meatloaf Glaze Recipe
- Add all your ingredients to a bowl.
- Stir to combine.
- Spread generously over your meatloaf before baking, reserving half the amount.
- Allow your meatloaf to bake slightly, then remove and spread with the remaining meatloaf glaze.
- Following these steps to use your meatloaf glaze recipe will keep your homemade meatloaf nice and moist!
Glaze for Meatloaf Substitutes
- White vinegar: You can also use apple cider vinegar or malt vinegar.
- Homemade meatloaf seasoning: You can also use pre-mixed Italian seasoning if you prefer.
- Another fun twist on meatloaf is to top it off with Parmesan Cream Sauce!
Meatloaf Glaze FAQs
What can I put on top of meatloaf instead of ketchup?
Instead of ketchup or tomato sauce, I use a blend of tomato paste and white vinegar with some seasonings. Tomato paste has the most incredible flavor for a meatloaf glaze. Add in the white vinegar, and it has the ideal consistency for baking a beautiful meatloaf.
Is meatloaf glaze gluten-free?
Yes! Double-check your tomato paste, but all ingredients in my meatloaf sauce recipe are naturally gluten-free.

Try adding Lebanese meat spices generously like allspice, clove, cinnamon, nutmeg..it does a meatloaf fantastically..a whole new dimension of flavor..and really sear some onion, red bell pepper and carrot chopped finely in some olive oil to caramelize before adding to the meatloaf..don’t add raw..and don’t forget dried mustard, maybe celery seed, parsley and thyme, Worcestershire also, and Maggi seasoning and a sprinkle of MSG..yep, I said it..or ketchup too inside.Reply

In the overview, you state that part of the sauce is to be spread over the uncooked meatloaf and the rest spread over it when it is partially cooked. Those instructions are omitted from the printable recipe. It would be helpful if they were added.Reply
